In medium bowl, mix goat cheese with chives, parsley, garlic, salt and pepper. Divide goat cheese mixture into 2-tbsp balls. Arrange on parchment paper–lined baking sheet. Freeze for 15 to 20 minutes or until firm.
In food processor, blend crackers until finely crushed. Transfer to shallow dish.
Transfer gluten-free flour to shallow dish. Whisk together egg in another shallow dish. Dredge goat cheese balls first in gluten-free flour, dip in beaten egg, then roll in crushed crackers.
Preheat air fryer to 400°F according to manufacturer’s instructions.
In two batches, arrange breaded goat cheese balls in air-fryer basket (do not overcrowd). Drizzle each batch with 1 tbsp oil. Air-fry for 5 to 7 minutes or until golden brown and crispy.
Meanwhile, in small bowl, whisk together honey and lemon juice. Drizzle over goat cheese balls before serving.
Tip: Goat cheese balls can also be served as a topping for salads.
