Chimichurri Spread
Crackers
- 1 box of Crunchmaster® Crackers
Produce
- 1 shallot, minced
- 2 cloves garlic, minced
- 1/2 cup finely chopped fresh parsley
- 1/2 cup finely chopped fresh cilantro
- 1 tbsp lemon zest
Dairy
- 4 oz plant based cream cheese, softened
Baking and Spices
- 1/4 tsp red pepper flakes
- 1/4 tsp dried oregano
- 1/4 tsp each salt and pepper
Oil and Vinegar
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
Directions
- Heat oil in small skillet set over medium heat; cook shallot and garlic for 2 to 3 minutes or until tender. Let cool completely.
- Using electric mixer, beat cream cheese until lightly and fluffy. Stir in shallot mixture, parsley, cilantro, lemon zest, vinegar, red pepper flakes, oregano, salt and pepper until blended.
- Spread mixture over crackers.
Tip: Top with your favorite store-bought deli beef slices or thinly sliced leftover grilled steak.
