Chimichurri Spread

Crackers

  • 1 box of Crunchmaster® Crackers

Produce

  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/2 cup finely chopped fresh parsley
  • 1/2 cup finely chopped fresh cilantro
  • 1 tbsp lemon zest

Dairy

  • 4 oz plant based cream cheese, softened

Baking and Spices

  • 1/4 tsp red pepper flakes
  • 1/4 tsp dried oregano
  • 1/4 tsp each salt and pepper

Oil and Vinegar

  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar

Directions

  1. Heat oil in small skillet set over medium heat; cook shallot and garlic for 2 to 3 minutes or until tender. Let cool completely.
  2. Using electric mixer, beat cream cheese until lightly and fluffy. Stir in shallot mixture, parsley, cilantro, lemon zest, vinegar, red pepper flakes, oregano, salt and pepper until blended.
  3. Spread mixture over crackers.

 

Tip: Top with your favorite store-bought deli beef slices or thinly sliced leftover grilled steak.
