Mini Strawberry Ricotta Avocado Toasts
Ingredients
- 1/2 pkg (each 3.54 oz) Crunchmaster Crackers
- 1 small avocado, halved, pitted and peeled
- 2 tbsp lemon juice
- 1/4 tsp salt, divided
- 1/4 tsp black pepper, divided
- 1/2 cup of dairy free ricotta cheese
- 1 tbsp olive oil
- 6 small strawberries, sliced
- 2 tsp vegan balsamic glaze
- 2 tbsp fresh basil leaves, thinly sliced

In small bowl, mash avocado with lemon juice, 1/8 tsp salt and 1/8 tsp pepper.
In food processor, blend ricotta, olive oil, remaining salt and remaining pepper until whipped and smooth.
Divide avocado mixture among crackers. Top with dollop of ricotta mixture. Top with strawberries and drizzles of balsamic glaze. Garnish with basil. Serve immediately.
Tip: Substitute strawberries with heirloom tomatoes or roasted beets for variations.
