Roasted Jalapeño Guacamole
Crackers
- 1 pkg Crunchmaster Crackers
Produce
- 2 jalapeño peppers
- 2 ripe avocados, halved, pitted and peeled
- 1/4 cup lime juice
- 1/4 cup diced red onion
- 2 tbsp finely chopped fresh cilantro
- 1 clove garlic, minced
Oil and Vinegar
- 2 tsp canola oil
Baking and Seasoning
- 1/2 tsp chili powder
- 1/2 tsp salt
Directions
- 1. Preheat broiler. Toss jalapeños with oil; place on foil-lined baking sheet. Broil for 3 to 5 minutes or until lightly charred all over; let cool completely, then seed and dice.
- 2. Lightly mash avocados with lime juice. Stir in jalapeños, red onion, cilantro, garlic, chili powder and salt. Transfer to serving bowl. Serve with crackers for dipping.
Tip: Jalapeño peppers can also be grilled on the barbecue.
