Yogurt Tzatziki Dip
Crackers
- 1 box of Crunchmaster Crackers
Produce
- 1 cup packed grated cucumber
- 2 green onions, thinly sliced
- 2 tbsp finely chopped fresh mint
- 2 tbsp finely chopped fresh dill
- 2 tbsp lemon juice
- 2 cloves garlic, minced
Dairy
- 1 1/2 cups plant-based Greek style yogurt
Oil and vinegar
- 2 tbsp olive oil
Baking and seasoning
- 3/4 tsp salt, divided
- 1/4 tsp pepper
- 1/4 tsp cumin
Directions
1. Sprinkle cucumber with 1/2 tsp salt. Let stand for 10 minutes in colander set over bowl. Squeeze dry to remove excess moisture.
- 2. Stir together cucumber, yogurt, green onions, mint, dill, lemon juice, olive oil, garlic, remaining salt, pepper and cumin.
- 3. Transfer to serving bowl. Serve with crackers for dipping.
Tip: Sprinkle tzatziki dip with crumbled feta cheese if desired.
