Packed with tropical flavors, these guacamole shrimp bites taste like vacation and are the perfect snack or entertaining appetizer!

Preheat grill pan over medium high-heat; grease well.
In medium bowl, toss shrimp with chili powder, salt, black pepper and 2 tbsp lime juice until coated.
Grill shrimp, turning halfway, for 1 to 2 minutes or until pink and cooked through.
Meanwhile, in another medium bowl, toss together red pepper, pineapple, cilantro, remaining lime juice and onion.
Cut shrimp in half widthwise.
Spread guacamole evenly over 56 crackers. Top each with a shrimp half. Spoon pineapple mixture evenly over shrimp and top each with jalapeño slice.
Tip: Alternatively, grill shrimp on barbecue, if desired.
