Apple and cheddar make a perfect pairing for this easy vegetarian appetizer or snack. These bites are bright, balanced and sure to be hit for any occasion!

Preheat oven to 400F. Line baking sheet with foil or parchment paper.
In medium bowl, toss together apples, thyme, oil, table salt, pepper, chili flakes and 2 tbsp honey. Arrange on baking sheet.
Bake for 12 to 15 minutes or until apples are tender and dark golden brown.
Spread ricotta evenly over crackers. Top evenly with roasted apples mixture, drizzle with remaining honey and garnish with Maldon salt.
Tip: To add a pop of color, garnish with additional fresh thyme or chopped fresh chives or parsley, if desired.
