  • 2 heads garlic, unpeeled
  • Oil and Vinegar
  • 3 tbsp olive oil, divided
  • Baking and Seasoning
  • 1/4 tsp dried oregano
  • 1/4 tsp each salt and pepper


  1. Preheat oven to 400°F. Slice off tip from each head of garlic just enough to reveal garlic cloves, leaving base intact. Drizzle each head of garlic with 1 tsp oil; wrap each in foil. Roast for 35 to 40 minutes or until garlic is soft and tender. Let cool enough to handle; squeeze out garlic from cloves into bowl.
  2. Stir in remaining oil; mash until very soft and spreadable. Season with oregano, salt and pepper.
  3. Spread roasted garlic over crackers.


Tip: Garnish with finely chopped fresh basil or parsley if desired.
